This is a question we get asked quite often, whether it's possible to add other flavours into the gin as it's being made.
The answer is that it's definitely possible, but we would always recommend making the gin from start to finish and then adding the flavours after. The reasons for that are twofold. The first is that the finished gin is quite spicy, a bit like the brand Ophir, and has quite a distinct flavour profile. It may be helpful to taste the finished gin so you can be sure that the extra flavours you are adding will complement the botanicals rather than fight against them. The second reason is purely practical, that adding in other flavours at the same time as the botanicals can make it difficult to exactly control the infusion times of each as it may be tricky to separate them.
