You can combine two fruits from the recipe book by just proportioning the fruit and sugar quantities accordingly.
Example, assuming a 50:50 ratio of each fruit:
Fruit recipe A from recipe book = 1.3kg sugar, 1kg fruit
Fruit recipe B from recipe book = 1.5kg sugar, 0.9kg fruit
Blended wine recipe = 1.4kg (0.65 + 0.75) sugar, 0.5kg fruit A, 0.45kg fruit B
